Unlike traditional cherry bounce, this one uses dries cherries and honey. This makes the whole process much faster. Be sure to use sour cherries. If you don't, you'll end up with cough syrup!
Warning: You have to really like cherry to enjoy this one...or mix with coke for a spiked cherry coke. I also enjoy it half and half with sparkling water.
1. Add the following to 2.5 cups Elijah Craig 12 year bourbon:
-6 oz Dried Tart Montmorency cherries (1 1/3 cup fresh, if you can get it)
-1/3 cup honey
-1/2 whole cloves
-1 allspice berries
-1/4 cinnamon stick
-Zest from 1/2 a lemon
2. Let stand about a week.
3. Filter through a French press followed by a 1.5 micron filter.
