Lemongrass Ginger Mint Spring Special

This lemongrass-ginger-mint cocktail is nice and refreshing on a warm spring afternoon.

1. Make a pint of tea in a french press using 2" of ginger thinly sliced and one stalk of diced lemongrass. Add 1/4 cup honey or to taste. Mix and allow to cool.

2. To a shaker with ice, add 1.5 shots of vodka (bourbon or gin work as well), a lime wedge, 3 mint leaves, and 2-3 shots of the tea; shake.

3. Pour into a highball glass and top off with Sprite. Stir gently.

4. Garnish with a lemongrass stalk and sliced ginger.
